¾ cup Milk of your choice 

100g Raw pumpkin 

1 x Egg 

2 tablespoons Maple syrup 

1 tablespoon Oil of your choice

¾ cup Buckwheat flour 

¼ cup Tapioca flour 

1 teaspoon Baking powder 

½ teaspoon Baking soda 

½ teaspoon Cinnamon (ground)

¼ teaspoon Ginger (ground) 

Pinch Nutmeg (ground)


1/. Chop pumpkin into chunks and add to a small saucepan, cover with water and bring to a boil over high heat. When pumpkin is soft, turn off the heat, drain and add pumpkin to your blender along with milk, egg, maple syrup and oil. Blend until smooth. 

2/. In a mixing bowl, combine flours, baking powder, baking soda and spices. Using a whisk, pour the pumpkin mixture into the flour and whisk until smooth. 

3/. Preheat the waffle maker to desired setting (a tone will sound when preheated). 

4/. Pour a scant cup of batter through the top of the spout. When the tone sounds, the waffle is ready. Carefully open the waffle maker and remove the baked waffle. Close the waffle maker and repeat with the remaining batter.
