Bulk prep lunch : Japanese inspired salad

Plan: bulk prep lunch on Monday night 

Meals for: Tuesday - Friday 

Recipe: Made it up! 

Shopping list: 

Soba noodles or buckwheat noodles 

Daikon 

Snow pea sprouts 

Carrot 

Wombok 

Cucumber 

Sesame seeds

Arame 

 

 

DRESSING 

1/2 cup of Olive oil 

1/4 cup of Apple Cider Vinegar 

1 tbsp of Fresh Ginger 

1 tbsp of Ume Boshi Puree/Paste 

1 tbsp of Lemon juice 

1 -2 tbsp of Coconut sugar 

1 tsp of Sesame oil 

 

DIETARY 

Vegan 

Use buckwheat noodles to make it Gluten-free 

Low FODMAP (replace snow pea sprouts with Alfalfa)
