 I have been on a gluten-free and dairy-free diet for 3 years. I was also advised to have a low amount of tomatoes, legumes and acidic foods like alcohol and coffee. These days I do consume a small amount of cheese, mainly goats milk and I eat five:am no added sugar yoghurt. Most often our diet includes gluten-free grains, however we occasionally eat sourdough and organic rolled oats. Why have I continued to eat this way? It just feels gentle on my stomach and digestive system. We hope to continue to reduce the quantity of organic meat we eat and eventually eat a more vegetarian based diet. 

 

It takes me 10 minutes to cook breakfast each morning that's everything from porridge, to waffles, to omelettes and scrambled eggs. I like to mix it up each morning, I like variety. 

 

For lunch I spend about 15 - 20 minutes cooking each day or there are leftovers from dinner to be eaten. Sometimes I am organised and have soups and salads prepped in advance. 

 

We spend about an hour cooking dinner each night. Depending on the meal, most often we can be in and out of the kitchen during the cooking period. Occasionally, I will cook two dinners at once - I might have a slow cooked beef stew cooking in the oven while I make risotto on the stove-top!
