GINGERBREAD

INGREDIENTS 

30g Tapioca flour 

70g Quinoa flour 

60g Rice flour 

½ tsp Baking soda 

2 tsp ground Ginger 

1 tbsp Chia flour 

50g Brown sugar

20g Maple syrup 

50g Coconut oil 

⅓ cup Water 

METHOD 

1. Preheat oven to 175℃. 

 

2. To make chia flour, simply add chia seeds to your NutriBullet or a mortar and pestle,  and blitz or grind to a flour consistency. In a large mixing bowl combine arrowroot, quinoa flour, rice flour, baking soda, ginger, chia flour and brown sugar. 

 

3. In a small saucepan add coconut oil, maple syrup and water. Heat over medium heat until melted. Combine wet ingredients with dry ingredients. 

 

4. Lightly dust bench with GF flour (preferably rice flour) and knead the dough. Roll out dough to 5mm thick and cut out gingerbread people. Place on a baking tray lined with baking paper. Bake in the oven for 10 - 12 minutes or until golden on the base.
